"숙성이 좋은 일식집... 간만에 만족스럽다"

아무리 LA라고 할지라도 만족스러운 스시집을 찾기 쉽지 않은데 일본인 쉐프가 있는 만족스러운 동네 일식집을 발견했습니다(나중에 알고보니 한곡인아셨음). 이름도 버터리~~한 Seabutter. 이름에서 암시하듯 버터처럼 입에서 녹아내리 숙성도 좋고 부드러운 생선을 위주로 판매할 것 같았는데 역시 참치, 방어, 연어, 관자 같은 부드러운 생선 위주의 메뉴판이였습니다.

#한국인쉐프
두 번째 방문에서 어디선가 들리던 한 줄기 한국어. 여기 오너쉐프 두 분이 한국인이셨네요. 그래서 그런지 서버들이 잔이 비면 <재수없다>고 사케잔을 계속 채워주는 서비스를 해주셨습니다. 좋아하는 아부리야인 같이 고급 일식집에서나 받던 서비스를 중급 레벨의 일식당에서 받으니 기분이 새로웠습니다.

샤리가 한국에 비해선 조금 더 단단히 뭉쳐서 있고 온도감은 없는 것이 아쉽습니다만 호방한 크기와 설탕으로 단맛을 낸 맛의 발란스는 좋았습니다.

#네타
생선들이 참 풍성한데…
두툼하게 썰어 올린 네타가 부드럽고 풍성해서 너무 만족스러웠습니다. 참치와 연어 방어 모두 품질이 매우 좋아서 비린맛 전혀 없이 고소함의 극치였네요. 광어 또한 두툼하게 썰어 올리는데 의외로 숙성이 좋아 질긴 맛이 전혀 없는 아주 맛있는 광어였습니다. 특이하게 채소네타가 있는데 베지테리안들을 위해 아보카도, 중국브로콜리, 버섯, 파프리카 등의 채소초밥도 있는 메뉴 구성이 특이했습니다.

#맛내가
평범함을 거부하는 독특한 맛내기 메뉴들이 있습니다. 트러플연어는 생언어에 정체불명의 고명과 트러플솔트가 솔솔 뿌려져 있어 행기가 기가막혔습니다. 다만 강한 트러플향이 연어의 고소함을 가리는 단점도 있네요.

#롤
구태의연한 롤이 아니고 일본인 스타일의 롤이 참 인상적이에요. 꽈리고추튀김을 넣은 참치롤 방어롤과 양파튀김과의 조화. 너무나 만족스러운 맛과 비주얼의 핸드롤도 사랑스러웠네용.

#누름초밥
스시는 쥠초밥과 누름초밥이 있는데 원래 관서지방의 누름초밥이 대세였다가 도쿄를 포함한 관동지방의 쥠초밥이 발전하면서 현재의 초밥 흐름이 만들어 졌습니다. 특이하게 이집은 누름초밥이 있습니다. 물론 진짜 오사카풍의 누름초밥은 아니고 롤을 네모나게 만들은 수준이지만.. 제가 먹은 의 조합은 굉장히 인상적이였습니다. 고소한 방어의 맛과 트러플향이 나는 맛버섯볶음의 조합, 그리고 요즘 유행하는 스리라챠마요의 마무리가 뽀인트...

#크리스피라이스
이집은 누릉지초밥이 맛있습니다. 잘 눌은 밥 위에 차가운 생선은 그 조화와 식감이 매우 우수합니다. 참 스마트한 한국인 쉐프님들.

#아쉬운점
핸드롤이 굉장히 아쉽네요 첫 방문 점심 때에는 굉장히 맛있었는데 두 번째 저녁 방문에 주문한 연어껍질 핸드롤은 김도 완전히 누지고 잘 말아지지 않아 내용물이 질질 새어나오고 ㅠㅠ
연이어 주문한 카파마키 역시 김이 잘 말아지지 않고 누져서 저로서는 빵점짜리 김말이였습니다.
맛이나 숙성 면에서는 굉장히 인정하고 싶지만 김을 다루는 솜씨는 조금 저 발전이 필요해 보입니다.

약간 보완할 점이 있다는 것은 어떻게 보면 도전이죠 맛이나 아이디어는 굉장히 인상적이기 때문에 김에 대한 부분만 보완한다면 더욱 괜찮은 일식당이 되지 않을까 생각이 됩니다 화이팅!!

1️⃣classic omakase-Reasonably priced and quite good. The slices were thicker and very fresh, making it great value for the price. I'm satisfied!✅✅

2️⃣fried tempura-Excellent! The batter was done perfectly—crispy and light.✅✅✅✅

3️⃣pressed otoro-Felt more Americanized. If you prefer traditional Japanese style, skip this one. The texture was lacking, and it kept sticking to the paper box.

4️⃣dragon roll-The sauce was overly salty, and the rice was too wet and sticky, clumping together unpleasantly.

Hair on a business trip and pull this name out of the hat for sushi tonight, it was close by our hotel. We were the first to arrive approximately 6 PM and received such a warm welcome from the host Astrauex, the sushi chefs and our server. The fish was fresh and tasty, The yellow tail melted in my mouth. They are light on the rice, which is wonderful! You have to try the marilyn monroll! By the time we were done more guests were filtering in.... Don't forget the green tea matcha mochi!

Love the name and it perfectly describes the quality of the sushi....melt in your mouth. Excellent selection too, including non sushi items. The miso cod with mushrooms was delicious but definitely sushi all the way next time.

We did the tasting menu and it was amazing. Every bite was excellent and the fish was incredibly fresh and buttery. Some of the best fish quality I’ve had in LA. Definitely worth a visit if you’re in town.

Holy moly, seriously some of the best sushi I’ve ever had in my life. Not only was the quality of the fish incredible but the unique flavor combinations in the rolls were unparalleled. Sit at the bar to watch the chefs prepare the food as you eat for an extra show. The sunset roll was genuinely mind blowing.

This place has been on my list of must try’s for some time now. I’ve heard some wonderful things from locals about how wonderful the food is. They weren’t wrong- the food is absolutely delicious. The flavors and the quality of the sushi are definitely top tier. This place certainly has the potential to be one of my favorite neighborhood sushi spots.

However, what soured the experience and makes me hesitant to return was the abysmal service. Our server seated us and essentially forgot we were there. She took our order and conveniently disappeared for the remainder of the night. Didn’t even leave any sauce or condiments on the table for the upcoming meal. When she did manage to surface, we requested a drink on three different occasions and it never came. There was an even a point when our food didn’t come for more than half an hour, and not a single time did she check to see if the kitchen had remembered to make our order. We honestly thought she probably forgot to put the order in given that our drink never came. Mind you, the place seemed busy with to-go orders, but there were several empty tables and sections, so the dining room was not very busy.

The saving grace was this phenomenal server Thea (who was not even assigned to our section) noticing that we were basically being neglected. Her intuition was spot on - she noticed us silently fuming and restlessly waiting for service and immediately jumped to the rescue from her section in the back. Without hesitation, she asked us what we needed, filled our empty water glasses and made sure we got our requested drink. When she noticed we didn’t have sauce or ginger on the table, she promptly offered to get us some. Throughout the rest of the night Thea would come and check in on us frequently and let us know we could call her if we needed anything (meanwhile our original server was nowhere to be found). Later she noticed we were waiting even longer than usual for our food, and she gave the kitchen a gentle nudge (without being prompted or asked)- the food came within minutes after that.

Our server did end up making one final appearance to ask if “we were ok,” then promptly took our soy sauce away before the rest of food even came.

Ultimately, Thea came to rescue and saved us from just walking out. If we return, we would only go if she were our server.

Overall, lots of potential, food is incredible, but service could be more consistent.
